The point of engine oil primarily, is to stop the metal surfaces in your engine from grinding together and shearing themselves apart from friction, while at the same time, transferring heat away from the combustion area. Engine oil must also be able to hold all of the combustion by-products, such as silicon oxide and acids in suspension. It cleans the engine of these chemicals and build-ups, and keeps the moving parts protectively coated. Finally, engine oil minimizes exposure of internal parts to oxygen which causes oxidation at high temperatures. It does all of these things under tremendous heat and pressure.
